🧄 Garlic & Mushroom Immunity Broth

A soothing, savory broth packed with antiviral and immune-loving ingredients

🍄 Ingredients:

  • 1 tbsp olive oil or sesame oil

  • 1 small onion, chopped

  • 4–5 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 cup mushrooms (shiitake or button), sliced

  • 1 tsp turmeric powder or grated turmeric

  • 1 tbsp tamari or low-sodium soy sauce

  • 4 cups vegetable broth or bone broth

  • Juice of 1/2 lemon

  • Handful of spinach or kale (optional)

  • Salt & pepper to taste

  • Fresh parsley, coriander, or spring onion to garnish

🥄 Instructions:

  1. Heat oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant (about 5 minutes).

  2. Add mushrooms and turmeric, stirring for another 2–3 minutes.

  3. Pour in broth and tamari. Bring to a simmer and let it cook for 15–20 minutes.

  4. Add leafy greens in the last 2–3 minutes, if using.

  5. Finish with lemon juice, salt, and pepper to taste.

  6. Serve hot with fresh herbs sprinkled on top.
