Ingredients (serves 2):
1 cup cooked quinoa (base)
1 cup roasted sweet potato cubes
1 cup steamed broccoli florets
½ cup red cabbage, shredded
1 medium carrot, grated
½ cup chickpeas, roasted with olive oil + paprika
1 kiwi fruit, peeled & sliced (NZ vitamin C hero)
2 tbsp pumpkin seeds (zinc-rich)
Dressing: 2 tbsp tahini, juice of 1 lemon, 1 tsp honey, splash of warm water to thin
Instructions:
Arrange quinoa in bowls as the base.
Add sweet potato, broccoli, cabbage, carrot, and chickpeas in colorful sections.
Top with kiwi slices and pumpkin seeds.
Whisk dressing ingredients until creamy (add protein powder here if using).
Drizzle over the bowl and enjoy immediately.
