1 cup mixed mushrooms (shiitake, cremini, button), sliced
1 small orange, peeled and segmented
½ red capsicum (bell pepper), thinly sliced
1 tablespoon olive oil
Garlic powder or 1 clove crushed garlic
1 teaspoon lemon juice
Salt and pepper to taste
Fresh herbs (parsley, coriander) for garnish
In a small pan, heat olive oil over medium heat. Saute mushrooms and capsicum for 5–6 minutes until softened.
Season with garlic, salt, and pepper while cooking.
Transfer to bowls. Gently toss in orange segments and a splash of lemon juice for brightness.
Garnish with fresh herbs and enjoy!
