
2 medium ripe bananas, mashed
2 eggs
1/4 cup Greek yogurt
1/4 cup maple syrup or honey
1 tsp vanilla extract
1 cup oat flour (or whole wheat)
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
Pinch of salt
Preheat oven to 175°C (350°F) and grease a loaf pan.
In a large bowl, mix bananas, eggs, yogurt, maple syrup, and vanilla.
Add in flour, protein powder, cinnamon, baking soda/powder, and salt. Stir until combined.
Fold in chocolate chips or nuts if using.
Pour into loaf pan and bake for 35–40 minutes, or until a toothpick comes out clean.
Let cool, slice, and enjoy!
