Cooking with Kimmi - Spring Glow Green Goddess Bowl

Ingredients:

  • 1 cup cooked quinoa (cooled)

  • ½ cup edamame beans (shelled)

  • ½ avocado, sliced

  • ½ cup cucumber, diced

  • ¼ cup grated carrot

  • 1 cup baby spinach or rocket

  • 1 tbsp pumpkin seeds

  • Juice of ½ lemon

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • (Optional: 1 scoop Beyond Yourself GrEAAns Citurs Green Tea mixed with a splash of lemon juice — drizzle over as part of dressing)


Method:

  1. In a large bowl, layer quinoa, spinach, cucumber, carrot, edamame, and avocado.

  2. In a small jar or bowl, whisk olive oil, lemon juice, salt, and pepper.

  3. If using Beyond Yourself GrEAAns, mix with 1 tbsp water and whisk into your dressing for an extra nutrient kick.

  4. Pour dressing over salad, toss gently, and top with pumpkin seeds.
