Cooking with Kimmi - Lemon Herb Quinoa Spring Power Bowl

 Ingredients

  • 1 cup cooked quinoa (cooled)

  • 1 cup baby spinach or rocket leaves

  • ½ cup cucumber, diced

  • ½ cup cherry tomatoes, halved

  • ¼ cup edamame or chickpeas

  • ¼ avocado, sliced

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp olive oil

  • Juice of ½ lemon

  • Salt & pepper to taste

  • 1 scoop Vital All-In-One or Good Green Vitality, mixed with 2 tbsp water or lemon juice


Directions

  1. In a large bowl, combine quinoa, spinach, cucumber, tomatoes, edamame, and parsley.

  2. In a small bowl, whisk olive oil, lemon juice, salt, pepper, and your dissolved Vital All-In-One or Good Green Vitality mix until blended.

  3. Drizzle the dressing over your salad and toss gently.

  4. Top with sliced avocado, extra herbs, or a sprinkle of hemp seeds if you like a crunch.
