
1 cup cooked quinoa (cooled)
1 cup baby spinach or rocket leaves
½ cup cucumber, diced
½ cup cherry tomatoes, halved
¼ cup edamame or chickpeas
¼ avocado, sliced
1 tbsp fresh parsley, chopped
1 tbsp olive oil
Juice of ½ lemon
Salt & pepper to taste
1 scoop Vital All-In-One or Good Green Vitality, mixed with 2 tbsp water or lemon juice
In a large bowl, combine quinoa, spinach, cucumber, tomatoes, edamame, and parsley.
In a small bowl, whisk olive oil, lemon juice, salt, pepper, and your dissolved Vital All-In-One or Good Green Vitality mix until blended.
Drizzle the dressing over your salad and toss gently.
Top with sliced avocado, extra herbs, or a sprinkle of hemp seeds if you like a crunch.
