Cooking with Kimmi – Watermelon, Feta & Chicken Spring Salad

Cooking with Kimmi – Watermelon, Feta & Chicken Spring Salad

Sweet watermelon, juicy chicken, salty feta and fresh mint with a zesty lime dressing.

It's a little unexpected, ridiculously refreshing and a nice change from the usual rice bowls and protein wraps.

Ingredients — 2 serves

  • 250–300g ready-cooked chicken breast, sliced

  • 2 cups watermelon, cut into bite-sized cubes

  • 100g feta, crumbled

  • ½ cucumber, chopped

  • ¼ small red onion, thinly sliced

  • A handful of fresh mint leaves

  • 2 cups baby spinach or rocket

Lime dressing

  • 1 tbsp extra virgin olive oil

  • Juice of 1 lime

  • 1 tsp honey

  • Black pepper to taste

Method

  1. Arrange the spinach or rocket on a large plate or in a serving bowl.

  2. Add the watermelon, cucumber, red onion and sliced chicken.

  3. Scatter over the feta and fresh mint.

  4. Whisk together the olive oil, lime juice, honey and black pepper.

  5. Drizzle over the salad just before serving and toss gently.

Protein: Approximately 30–35g per serve, depending on the chicken and feta used.

Why this one works

  • Protein-packed: Chicken provides the main protein hit, with extra from feta.

  • Minimal effort: Use ready-cooked chicken and lunch is on the table in about 10 minutes.

  • A little different: Sweet, salty, tangy and crunchy in the same mouthful.

Kimmi's reminder

Warmer days are coming, so make room for meals that are fresh, colourful and easy to throw together. Eating well doesn't have to mean eating the same thing every day.
