Cooking with Kimmmi - Spring Sunshine Buddha Bowl

A nourishing, colourful bowl that’s bursting with plant power and feel-good energy.
This one’s perfect for a midday reset or a light dinner that still satisfies.


 Ingredients

  • 1 cup cooked quinoa (or brown rice)

  • ½ cup chickpeas, roasted or plain

  • ½ avocado, sliced

  • 1 small carrot, grated

  • ½ cup edamame beans

  • ½ cup red cabbage, shredded

  • 1 handful of baby spinach or rocket

  • 1 tablespoon toasted sunflower seeds

  • ½ lemon (for squeezing)

Dressing:

  • 1 tablespoon tahini

  • 1 teaspoon olive oil

  • 1 teaspoon honey or maple syrup

  • Juice of ½ lemon

  • 1 teaspoon #Fundamentals L-Glutamine (for gut health & recovery)

  • Pinch of salt and pepper

  • 1–2 tablespoons warm water (to thin)


Directions

  1. In a bowl, layer your quinoa, veggies, and chickpeas.

  2. In a small jar, whisk together the dressing ingredients until smooth.

  3. Drizzle generously over the bowl.

  4. Top with avocado slices, sunflower seeds, and a squeeze of lemon.

  5. Eat immediately, or pack it up for a refreshing on-the-go lunch.
