1 cup cooked quinoa (or brown rice)
½ cup chickpeas, roasted or plain
½ avocado, sliced
1 small carrot, grated
½ cup edamame beans
½ cup red cabbage, shredded
1 handful of baby spinach or rocket
1 tablespoon toasted sunflower seeds
½ lemon (for squeezing)
Dressing:
1 tablespoon tahini
1 teaspoon olive oil
1 teaspoon honey or maple syrup
Juice of ½ lemon
1 teaspoon #Fundamentals L-Glutamine (for gut health & recovery)
Pinch of salt and pepper
1–2 tablespoons warm water (to thin)
In a bowl, layer your quinoa, veggies, and chickpeas.
In a small jar, whisk together the dressing ingredients until smooth.
Drizzle generously over the bowl.
Top with avocado slices, sunflower seeds, and a squeeze of lemon.
