
Ingredients
2 kiwifruit, peeled and sliced
1 orange, peeled and segmented
½ small red onion, thinly sliced
1 cup baby spinach leaves
½ avocado, sliced
2 tbsp pumpkin seeds
Dressing
2 tbsp olive oil
1 tbsp lemon juice
1 tsp honey
Pinch of sea salt & black pepper
Instructions
Arrange spinach on a serving plate.
Layer on kiwi, orange, avocado, and red onion.
Whisk together dressing ingredients and drizzle over the salad.
Sprinkle pumpkin seeds on top.
Serve fresh and enjoy the zing!
