
Immune-Boosting Elixir
Serves: 4–6
Prep Time: 10 minutes
Cook Time: 8–12 hours (slow cooker) or 3–4 hours (stovetop)
1 whole chicken carcass (or 1kg of chicken bones, preferably organic)
1 onion, quartered
4 cloves garlic, smashed
1 thumb-sized piece fresh ginger, sliced
1–2 carrots, chopped
2 celery stalks, chopped
1 tbsp apple cider vinegar (helps extract nutrients from the bones)
2 bay leaves
A few sprigs of fresh thyme or parsley
2 tsp Celtic & NZ Sea Salt
10–12 cups water
Add all ingredients to a large pot or slow cooker.
Cover with water and bring to a gentle boil.
Reduce heat and simmer for 3–4 hours on the stovetop (or 8–12 hours in a slow cooker).
Skim off any foam that rises to the top.
Once finished, strain the broth and discard solids.
Store in the fridge for up to 5 days or freeze in portions.
